Tomato Processing Machinery
We can offer a Cold Break or Hot Break type
Input capacity – 0.5 T/hr to 20 T/hr
Higher capacities of tomato processing are recommended.
Hot break system is recommended for more viscous products. The HB product is used for ketchup and
different sauces.
Cold break system is recommended for less viscous products. The CB is mainly used for triple
concentrate paste at 36-38° Brix.
Tomato washing requires 3 times water with respect to input capacity of tomato in Cu M/hr.
Sorting conveyors are used for removing the damaged tomatoes, & green leaves.
The sorted tomatoes are chopped by a hammer mill or special mono block screw pump.
The chopped tomatoes pulp is preheated in tube in tube pre-heater 65 to 75 °C.
Pulper & refiner are used to separate seed, skin,
Pulper screen is with 1 mm perforation holes.
Refiner screen is with 0.6 mm perforation holes.
Tomato yield depend on variety of tomato, process temperature, Pulper & refining screen & its
rotating rotor rpm.
100 kg tomato input may give 93 -94 kg of juice.
Preheated juice is stored in juice tank preheated juice is pumped to evaporator. Evaporator operations
are automatic to set predetermined final brix to the product.
Evaporator is under vacuum
Evaporator capacity is measured on water evaporation lit/hr.
Concentrated juice is transferred by high pressure pump into sterilizer, holding & cooling system.
Sterilized juice is filled aseptic in aseptic bag in drums by Aseptic Filler.
Packed product can be stored 12 to 24 months depending on its pH value & storage conditions.
Tomato Ketchup / Puree / Paste / Sauce Machinery
Machinery to make tomato Ketchup from Tomato Puree/Paste from Aseptic Bag in drum
Tomato paste at 30/32°Brix Hot Break type is being pumped from aseptic storage tanks or from 200 L
aseptic bags-in-drums into the first mix tank. Drinkable/softened water is being added in a volume
such to reduce the solids content down at 15 –16°Brix. The quantity of paste is controlled by a
weighing station where the drums are placed.
In a separate tank the sugar syrup preparation takes place. Sugar powder is added by a warm screw
conveyor and pre-warmed water is fed and controlled by magnetic flow meter.
The two products are mixed in the tank up to a concentration of 50/55°Brix and then sent to a
storage tank previous filtration through paper filters.
Aseptic tomato paste of 28-32° Brix is mixed with RO water to dilute 15-16 °Brix.
Other ingredients are mixed into standardization tank
All mixed pulp with ingredients is preheated into tube in tube pre-heater.
Preheated pulp is passed through homogenizer.
Homogenized pulp is pumped to sterilizer, holding cooling for pasteurization.
Sterilized pulp is deaerator in vacuum deaerator further sent for filling section [temp – 95°C] into glass
bottles/pet bottles.
The filling can be done by bottle filler, can filler, pouch filler, sachet filler.
All these filled bottles, cans, pouch; sachets are to be transferred through sterilizing & cooling
conveyors.
Equipments for tomato juice making /production line
Same varieties of tomatoes or aseptic tomato paste are used to make tomato juice.
Standard production procedure is used to make tomato juice through refiner of 0.4 mm perforation
hole size.
Standard sterilizer, holding & cooling is used for standard pasteurization procedure.
Tomato Juice can be packed in pet bottles & tetra packs, pouches.
Equipment For Producing Whole Peeled & Diced Ripened Tomato
Production line for producing whole peeled and diced ripened tomatoes
Fully ripened tomatoes are used for the whole peeled tomatoes.
This line is used by side of tomato paste making line due to wastage while peeling.
Input tomatoes are handled carefully in transportation; it is suggested to transport in plastic
crates/boxes.
Sorting is done for removing the cracked, immature or excessively small tomatoes.
Sorted tomatoes are transferred to boiled water rotating tank for skin removing.
Peeling of skin is done by mechanical or steam process.
Mechanical peeling is suitable
Tomato peeling is done under sudden pressure of steam and instantly cooling under vacuum by which
skin exploits to remove properly.
Peeled tomatoes are inspected by special inspection operators or by optical selector.
Peeled tomatoes are packed into metal cans in tomato juice.
Peeled tomato filled cans are sterilized & cooled in can rotating sterilizer [ 95°C ] & cooled into 35-
40°C.
Approx 100 Kg fresh tomatoes gives 60 kg peeled tomatoes.
